Bloomy Rind Cheeses
Bloomy Rind cheeses are known for their fuzzy white (usually) rinds. ours have a woodsy, earthy, mushroomy flavor.
they are made in small batches and aged for a minimum of three weeks before sale.

Modeled after a St. Marcellin, this little lovely is sold on the young side so that it can be enjoyed at the preferred maturity. We think she is delightful when she's young and has bright notes of fresh milk. As she matures, she gets a little sassy and has a bit of an attitude.

bloomfield - approximately 5 oz
Bloomfield is a close relative of our Marcy, a little line of ash in the center and a sprinkle on the outside tames her wild side- for a little while. Her true nature cannot be denied though, and with time, she too, will be creamy and runny through the center.
