Gouda with farmhouse hard cider wash

A traditional gouda recipe transforms our rich Normande milk into this beautiful, mild cheese. During aging, the rind is developed by repeated washing with hard cider we make from local apples.

Torrin tomme

"Torrin" is Gaelic for 'little hills'. We thought it was a lovely way to describe our tomme style cheese, aS our farm sits atop a little hill. When this cheese is young, 4-6 months, it has a buttery texture that is oh so creamy in the mouth. As it ages, a lovely nuttiness prevails. It is our favorite cheese for beefy dishes like French Onion Soup.
